The Uncook Book launch and Pina Colada recipe

The Uncook Book launch and Pina Colada recipe

    Hi my friends,

Whoa what a week it's been.

I don't remember the last time I felt this busy, excited, energised, exhausted, emotional, productive, behind, overwhelmed and calm all at the same time. Actually, I've never had a week this full on before.

To sum up just a portion of events that occurred in this short space of time, I had a birthday and my huge annual birthday sale which is always exciting and mega busy, my bestie threw us the most incredible and emotional gender reveal party (more on this next time), I took Tanya’s Cafe and book signing on the road for the first time ever, our dear friends and travel buddies got engaged, my first published book was officially released all over the UK, the massive competition with an insane amount of entries came to an end, prep for The Uncook Book launch was in full swing, followed by the exhilarating launch party itself and ending with travel outside of London for uncooking demonstrations and book signings.

Sounds super fun (and it really really was), but during all the celebrations, my inbox nearly exploded and I’m now weeks behind replying to everyone (if it’s you, now you know why, love you!), my sister’s flight was so delayed that she missed the gender reveal party which she was looking forward to since the moment she learned she was going to be an aunty, the wheels on my giant suitcase broke off on the way to the Birmingham demo which made the 30kg of equipment not only too heavy for helpful strangers to drag, but especially for me with a growing baby bump, which brought on a meltdown even I didn’t anticipate, and meanwhile ‘interesting’ events kept occurring at our cafes which needed my immediate attention.

The last thing I wanted to do is to write a post full of what sounds like complaints, but I hope you can see that I am just like everyone else :)

I cry, I get tired, I experience stress, I forget to drink water, I worry, I think too much and I take off my cape when it needs a good clean.

Amazing how just one day, sometimes even one moment, can remind you that you do live the best life ever and that there’s nothing in the world which would have you trading it for another.

For me that moment was last Thursday…

The Uncook Book launch party with some of my favourite people in the world, at my very own happy place, with my dream publisher, blessing my pride and joy into the world, may have just topped all the best nights of all time!

Aaaand finding out that during the first week of its release, The Uncook Book has already gone into its SECOND printing. Just wow.

Thank you so so much, it's all because of YOU!

Here are some of the pictorial highlights from my best night ever...

And because I believe that every successful party post deserves a recipe, here is one you will LOVE...

It was a hit and a half at The Uncook Book launch (above), it's the first recipe of the Party Section in the book and it includes my favourite ingredient combination EVER. Introducing...

    Pina Colada

    (serves 1)

    DSC_0048

    45ml (1.5fl oz) light rum

120g (4.25 oz) ripe pineapple, peeled and chopped, reserving leaves from the crown to garnish

90ml (3.25fl oz) fresh apple or pineapple juice (6 apples or 1 pineapple will usually produce enough juice for 4-6 servings)

    2 tbsp coconut butter

    2 tbsp manuka honey

    handful of ice

-Blend all the ingredients, except the ice and garnish, in a blender until creamy, then add the ice and blend again.

-Pour into a chilled highball glass or a goblet, garnish with the pineapple leaves and serve with a pretty straw.

    Saturday's Supperclub menu revealed!

    Saturday's Supperclub menu revealed!

After a seriously good night on Tuesday, I’m only just now catching up on all the amazing feedback and photos from our debut Superfood Supperclub, and getting really REALLY pumped to do it all over again this Saturday!

My husband’s Kiwi family have just arrived in London too and will also be attending to experience the best that Tanya’s has to offer for the very first time. I’m extra excited about that.

And of course I will be there myself, looking after you, so come along with whatever burning questions you have on nutrition, life, business, food, fun, shoes, glitter, anything. I can’t wait!

So to give you a little ‘taste’ of Saturday, here is a photo of your dessert:

    tanya's superfood supperclub

And so you can see why I think this brand new summer menu which we are launching at the event is my favourite menu since opening, here's what you'll be dining on:

Just like Tuesday, our Saturday’s Supperclub will also sell out before the day arrives, so make sure you are on the list.

The ice-cream that broke the internet

The ice-cream that broke the internet

    dairy free superfood ice cream

Ok perhaps it didn’t break the Internet (not like the news of Caitlyn Jenner or ‘the dress colour’ have), but the video and photo of my living superfood dairy-free ice cream did get shared enough to reach well over a million people around the world.

I think that’s pretty damn cool for a wee raw food blog.

Who would’ve thought, that this insane heatwave over London would be the greatest blessing in preparing for my upcoming Superfood Supperclubs…

It got me experimenting with more ice cream and sorbet flavours in 2 weeks than I have during my entire 6+ year raw food journey. Oh my, you guys attending the (almost sold out) event next week are in for a treat and a half!! The dessert platter will be out of this world.

So let’s get straight to the recipe…

    Acai & Violet Ice-Cream

    (fills approx. 1.5 litre container)
    superfood dairyfree icecream
    4 tablespoons coconut sugar
    4 tablespoons xylitol
    360ml (1.5cups) hot water
    140g cashews, soaked overnight
    2 tablespoons Acai berry powder
    1 tablespoon vanilla extract
    4 drops violet medicine flower
    400g strawberries
    1 banana

-Dissolve both coconut sugar and xylitol in hot water. Blend if needed for the crystals to dissolve fully. Allow to cool in the fridge.
-Transfer the chilled simple syrup to a blender, add soaked cashews, Acai, vanilla and violet extracts. Blend to a smooth cream.
-De-stalk the strawberries, peel the banana and add them to the blender. Blend together to a smooth consistency.
-Transfer mixture to an ice cream maker and turn it on as per manufacture’s instructions. If you don’t own an ice cream maker, pour into a container and transfer to the freezer for 2 hours, stir in a vigorous manner to break up the forming ice, return back to the freezer and repeat every 30-60 minutes until the mixture is set.
-Serve any which way you love your ice cream! I think this one is particularly delish with maple syrup and fresh berries.

The highly anticipated and long awaited Superfood Supperclub is coming to Tanya’s Chelsea on two dates this July!

The newly opened bright and beautiful terrace, as well as the brand new luxury 5-star summer menu, are to thank for the most inquired-about event of the year.

The evening’s innovative five course menu, designed by Tanya Maher and Head Chef Eddie Alsubaei, will kick off with a refreshing superfood cocktail and Californian roll, followed by a marinated fennel and cabbage salad with cultured seed cheese, then a surprise twist on our most popular summer dish, ending the night with a trio of raw indulgent truffle, ice-cream and sorbet with a raw (yes raw) coffee still inside its antioxidant rich berry, which is such a delicacy, it is not even on the everyday menu, as Tanya brought it all the way from Ecuador.

Additional superfood cocktails will be available to purchase on the night at an exclusive special of 2 for the price of 1 for all Supperclub guests.

Both Tuesday 14th July and Saturday 18th July will only have 50 tickets available and the first to purchase will be seated on the terrace. Tanya will be there, hosting the event, so come equipped with any question about food, health, life or business and she will make sure to make the rounds to answer them all.

Tanya Maher is the founder of the ultimate wellness company BetterRaw.com, co-founder of a high-end gourmet raw café chain TanyasCafe.com, creator of the Amazon #1 best selling DVD ‘Raw Food 101’ and author of Hay House’s ‘The Uncook Book’, out this September. Born in Russia, raised in New Zealand and now pioneering the clean eating movement in the UK, Tanya has been hailed as one of most recognised experts in the world of raw food and the UK’s top wellness coach, by the likes of Vogue, Daily Mail and Women’s Health.

There ain't no party like a raw staff party

There ain't no party like a raw staff party

Last night myhotels and Tanya’s Cafe joined forces for the party of the year!

It was the very first staff party for Team Tanya’s so it was extra memorable for us.

Especially memorable for me, because when the whole team got together, I realised that the entire original kitchen team were still there since day one. Five months on, we are still a pretty small team, but we are growing and doing it together. I just love all these guys so much, it’s kinda silly.

Oh and the food. I love the food! Their food. My food. Raw food. Check out what we had…
