    Raw Carrot Cake Recipe Video

    People often ask me if raw food is all about crunching carrot sticks. I can’t help myself but giggle and reply with a “nope, it’s also about drinking carrot juice, blending carrots into soup, applying grated carrot as face masks and chewing carrot cake”. I do love my giant orange Vitamin A pills! I also really love this carrot cake and think you’ll be pleasantly surprised at how similar it tastes to the baked favourite.

    The recipe is from my book, The Uncook Book (which is now also available in Polish!)

     

    For the cake

    150g pitted dates, soaked

    70g dried pineapple, chopped

    750g carrots, grated and squeezed to remove excess liquid

    50g ground flaxseeds

    60g ground gluten-free oats

    70g coconut oil

    75g maple syrup

    2 tsp mixed spice

    1 tsp cinnamon

    ½ tsp Himalayan salt

     

    For the frosting

    1 C soaked Cashews

    3 TBSP coconut oil

    3 TBSP agave

    juice of 1 Lemon

    1 tbsp vanilla extract

     

    -Prepare the cake layer first by processing dates and pineapple in a food processor, till they become chutney-like.

    -Add remaining ingredients and process again till well combined. Transfer the cake mix into a 9 inch spring-form tin, press firmly.

    -To prepare the frosting, firstly scrape out the seeds from a whole vanilla pod. To do so, slice the pod in half lengthwise, then use a teaspoon to literally scrape all the seeds out until the inside of the pod is dry.

    -Transfer all the frosting ingredients to a high speed blender and blend on ‘high’. Pour it over the cake and transfer to the fridge to set. Alternatively, if you prefer a runnier frosting, remove the cake from the tin and pour icing over it when serving.

     

    Tanya’s Top Tip:

    The base of the cake tin is not completely flat, as it has raised edges. To remove the cake easily without losing any of it that may catch on this ridge, insert the base into the adjustable tin ring so that the ridge faces downwards.

    She helps women worldwide quit dieting and finally end the war on their bodies through an abundance mindset and practicing true self love. She does this through her website, social media and an online academy.     DESCRIBE YOUR TYPICAL DAY OF EATING AND DRINKING.

    No matter what I choose to eat or drink, I always start by listening to my body and make my food choices accordingly. Sometimes I’ll fancy avo-toast for breakfast, sometimes it will be my sweet Sunday pancakes and sometimes I’ll just have some green juice!

    For lunch I might have a salad or eat out – there are so many great healthy restaurants in London now and then for dinner I might have my Green Goddess bowl of love or a thai green curry. I love to batch cook my main meals so dinner one night will often be lunch the next day too.

    WHAT (OR WHO) INSPIRES YOU TO EAT WELL AND STAY HEALTHY?

    My biggest inspiration has always been my Dad. I started researching diet and wellness when he was diagnosed with cancer, and that was the catalyst for everything I’ve done since, including becoming a health coach. I have also been hugely motivated and inspired by T. Colin Campbell’s book The China Study, and the work of Kris Carr. She’s amazing!

    WHAT IS YOUR BIGGEST WEAKNESS WHEN IT COMES TO FOOD AND HOW DO YOU DEAL WITH THAT?

    I think my biggest weakness is my schedule! I have an amazing but super busy schedule, and often it’s just too tempting to overeat in case I don’t have time to eat later or to get too engrossed in work and then skip food altogether! I have to actively remind myself to pause and give myself the time to sit and enjoy a meal. I drink a lot of green juice and smoothies on the go though which keeps me feeling nourished all day.

    MY TOP TIP FOR:

    Improving your diet is… focus on crowding in good things, rather than cutting out ‘bad’ things.

    Staying healthy while travelling is… to plan ahead and research healthy restaurants to visit! I spent 6 weeks city hopping in the USA last year, and loved exploring all the different healthy spots.

    Detoxing is… super important but easily used as a way to crash diet. To be done mindfully!

    Immunising is… much more effective when you have less meat and dairy in your diet, less processed foods, and more raw foods, more plants and more whole foods.

    WHAT’S THE NICEST THING ANYONE HAS EVER SAID TO YOU?

    The best compliments I receive are when a client tells me that the work I do has changed her life for the better. I could not wish for anything more and there is nothing more fulfilling than knowing that what you are doing is making a difference.

    HOW WOULD YOU LIKE TO BE REMEMBERED?

    I’d love to be remembered as being a force for good in the diet industry, and a change-maker. I hope to inspire thousands of women to ditch dieting for good and find true food and body freedom for life.

    IF YOU GOT TO KEEP ONLY 3 OF YOUR BELONGINGS: 1 THING FROM YOUR KITCHEN, 1 THING FROM YOUR GARDEN AND 1 THING FROM YOUR BOOKSHELF- WHAT WOULD THEY BE?

    From my kitchen it would have to be my Sage Juicer. Totally adore it. From my garden it would be my herb plants, for summer salads and from my bookshelf it would be….a notebook! I am constantly scribbling down notes and making lists – I would be lost without a notebook!

    WHY DO YOU BELIEVE THAT LIFE IS BETTER RAW?

    Quite simply for how it makes you feel! Your body is so clever and will always tell you what works and what doesn’t, some way or another. The body works better when it’s fuelled with more plants, more raw foods – you will have lasting energy, sleep better, better digestion, and lower risks of getting ill. Plus you are contributing to making our planet a healthier place for us all to live in. It’s a win win.

    Our Master of The Month shares her favourite raw food recipe…

    RAW CHOCOLATE GOJI BERRY BROWNIES

    The Ingredients

    4 cups pitted dates
    4 cups walnuts
    1 cup raw cacao powder
    1 cup goji berries
    1 cup pumpkin seeds
    2 Tbsp coconut oil
    1 large avocado
    2 Tbsp Agave Nectar

    ——————————————————-

    The How

    Blend the walnuts and raw cacao together in a food processor. Add the dates in, and keep blending, a few at a time.
    Add in the avocado, coconut oil, and agave, and continue to blend.
    Transfer to a mixing bowl, and add in the goji berries and pumpkin seeds to the mix, striring with a wooden spoon so they are well distributed.
    Line a cake tin or deep set baking tray with parchment paper – and fill the mix into the tray. Using the wooden spoon, press the mix into the tray so it is spread out and level.
    Freeze the tray for 1 hour.
    Cut into brownie pieces and serve to your guests!

    I get pretty darn excited about earth sourced foods and healthy snacking. I’ve been known to squeal in grocery stores on discovering aisles of healthy snacks and raw chocolates, I plan whole trips overseas around visiting raw food cafes just to taste their delicacies (and by delicacies I mean sweet treats), and I fan-girl pretty much any brand that is out there doing their bit to bring more plant based tasty goodness to the world!

    So I’m super excited to share with you what I’m digging right now in the world of plant based living…

     

    OM Bar Centres (where have you been all my life?)

    If you're anything like me on entering the raw food world you looked for ways to replicate your favourite childhood food with a raw healthy version.
    When I was a child I was mad about Cadbury's Roses chocolates. And not just any of them, but specifically the strawberry flavoured ones. There started my life long passion for chocolate combined with berry flavours.
    When I discovered OM Bar Chocolate I was immediately taken with their Strawberry Mylk bar. It took creamy to a whole new level in raw chocolate, with the sweet tart taste of strawberries I adore. Then came the Blueberry + Acai bar with its tart snap along side the rich raw cacao flavour.

    Nobo Icecream (a love story)

    One day in late November there was a report of snow on the horizon in my lovely town of Hove. I love it when it snows. I love it in the way that only an Australian can who grew up wondering what White Christmases were like.
    'It won't snow here, we live too close to the sea' my house mate assures me. I hope she's wrong.
    The day before the expected arrival of those dainty white flakes it was the coldest it had been all year. I could almost taste the snow in the air. I was pumped. 'It's going to snow, it's going to snow I just know it.'
    But on the morning of the next day my iPhone had converted the sweet little snow flake icon on my weather app to cloudy and rainy. What a disappointment.
    My house mate was not surprised, but on seeing my dismay she returned from the shop with a bounty of delicious ice cream. And this ain't just any kind of ice cream. It's the kind that leaves you feeling like you've just given yourself a mouthful of heaven. It's the kind that lets you forget that winter isn't for eating ice cream, and reminds you that good exists in this world when you can eat something so truly delicious which also just happens to be nutritious as well.     POSITIVITEA (A POSITIVELY DELIGHTFUL EXPERIENCE)

    My body inspires my health.  We, (me and my body), are going to be hanging out together for many years, so I listen and align to my body’s wisdom.

    Every option in our kitchen is a whole, healthy, beautiful food. So our cravings are always a celebration and eating is a delight.

    Improving your diet is… Go fresh and get real! Eat only fresh, real food. Nothing processed.

    1. From my kitchen, I would take our go-to large, sharp knife that we use in preparing every meal.

    2. I would dig up the bountiful blackberry bramble from my garden to take with me.

    3. There is a beautiful edition of The Flower Adornment Sutras on our bookshelf.

    IF YOU COULD HOST A DINNER PARTY FOR 3 GUESTS (DEAD OR ALIVE)- WHO WOULD THEY BE AND WHAT WOULD YOU SERVE?

    I am a poet at heart, so if I had to choose three guests for a dinner party tonight, I’d pick three Sufi poets: Rumi, Attar of Nishapur, and Lalla Ded. We would feast on dates, oranges, and mead.

    WHY DO YOU BELIEVE THAT LIFE IS BETTER RAW (OR WITH MORE PLANTS IN YOUR DIET)?

    The first and best reasons to eat more plants is that they are a treat for your taste buds and a plate full of fruit and veggies looks like a painting on a plate. Beautiful!

    Also, over the last few years, scientific researchers have demonstrated repeatedly that our whole body health, and even our happiness, relies on a diverse population of microbes in our gut. These friendly flora thrive when fed a diet rich in oligosaccharides.  This prebiotic is found in an incredible variety of plant foods, such as artichokes, asparagus, beets, beans, broccoli, Brussel sprouts, cabbage, fennel, garlic, Jerusalem artichoke, chicory root, leeks, lentils, okra, onion, peas, shallots, apples, persimmon, pumpkin, and watermelon.

    CHOCOLATE BLUEBERRY CREPES
    Serves 10

    Raw Blueberry Crepes 2

    What you’ll need:​

    2 cups blueberries (fresh or frozen)

    ½ cup ground chia (sprouted ground chia is the best)/or fresh ground flax seed

    1 cup tocotrienols (rice bran solubles)

    3 drops lemon essential oil

    To make:

    Mix all of the ingredients in a food processor.

    Spread out like a pancake on a dehydrator tray and dehydrate over night.

    Wake up and dress your pancake.

    Roll raw chocolate into the pancake, almond butter icing, or a nut cheese. Whatever takes your fancy!

    Yum!

    I meet a fellow Antipodean, same age as me, who also happens to be a best selling Hay House author, has a weekly radio show, lives in one of my favourite cities in the whole entire world - New York, has a hell of a health transformation story and she's drop dead gorgeous!

    Liana Werner-Gray from The Earth Diet, made quite an impression.

    Meet our December's Master of the Month...

    DESCRIBE YOUR TYPICAL DAY OF EATING AND DRINKING.

    I do “The Earth Diet”. Custom made to my lifestyle is 70% raw foods and 30% cooked foods. I do incorporate some meat here and there, but I am a majority plant based/vegan including my skin care products, household products and clothing!

    After rising: I usually start the day with lemon water or apple cider vinegar. Sometimes I do oil pulling with sesame seed oil.
    Breakfast: I love chia seed cereal with sliced tigernuts and hemp seeds as a topping! Then I have one fresh vegetable juice everyday. My favourite is cucumber, celery, kale, parsley, lemon and ginger – just pure goodness!
    Supplements: I usually take 2 supplements throughout the day: bentonite clay and activated charcoal. Snacks: I will eat as much raw whole foods as possible like avocado or straight up cauliflower. I always get my whole raw greens in everyday like a salad or at least a Phresh Greens which is just mixing the powder into water for an instant serving of daily greens!
    Lunch and Dinner: I usually have one cooked meal a day. Usually a recipe from my book like the Cumin Quinoa, vegan Mac n Cheese (gluten free using brown rice pasta) or Tacos. Everything I eat is as natural as possible that comes straight from nature.
    Desserts and treats: I have something sweet every single day, whether it is a piece of fruit, or organic candy, or a Raw Chocolate Almond Butter cup – which is why I created my own raw chocolate line so that I could eat it everyday! :p I used to be addicted to the worst kind of chocolate with refined sugar, soy and dairy, and I broke my binge eating cycle by replacing it with raw chocolate that gives me so many antioxidants, nourishment and protein!

    WHAT (OR WHO) INSPIRES YOU TO EAT WELL AND STAY HEALTHY?

    The “feeling” good is what keeps me wanting to stay healthy. I spent way too many years (5 years in total) of intense suffering every single day around food. I had an addiction to junk foods and I would binge eat, emotional eat and over eat. I so badly wanted to break out of that vicious cycle and feel better, and I achieved that with doing 365 days of eating only from nature (documented daily at www.TheEarthDiet.blogspot.com) and now I am so grateful to have relief and freedom around food. Now I actually enjoy food and I don’t even crave junk foods at all which amazes me. I love how I feel now and so I want to maintain this peace, harmony and health that I experience.

    WHAT IS YOUR BIGGEST WEAKNESS WHEN IT COMES TO FOOD AND HOW DO YOU DEAL WITH THAT?

    When I get emotional, stressed or tired I crave a lot of sweets and carbs and then I usually over eat on them. They are all organic though so I don’t get trapped in it for long. I tell myself the affirmation “It is better than eating a whole lot of junk food, and still a major upgrade from my past habits”. However I am aware of it, and I have set an intention to break out of the habit of over eating when I am emotional. I am choosing instead to replace it with other things like asking God for help, breathing and just being ok with feeling uncomfortable emotions knowing that they will pass soon.

    I also eat handfuls of TigerNuts when I am craving or feel like I am about to overeat, because they are a root vegetable so there is no guilt attached to eating vegetables haha, plus they are mostly fibre so they fill me up, but don’t have crazy amounts of calories. Plus they have the same amount of iron as red meat so it makes me feel strong. Also when I crave candy like gummy bears, I will go get organic gummy bears and allow myself to enjoy them as it’s a major upgrade from eating corn syrup candy that is full of gluten!

    MY TOP TIP FOR:

    Improving your diet is… focus on what nature/God provides us with! The Earth has it all there for us – just eat as many whole foods that come directly from nature as possible!

    Staying healthy while travelling is… always carry raw chocolate or your favorite superfoods!

    Detoxing is… drink bentonite clay daily. It will absorb toxins, parasites, worms and heavy metals. It is volcanic ash.

    Immunising is… drink beet juice and green juice every single. It will literally transform the body!

    Beauty is… whiten your teeth with baking soda! No need for harsh chemical whiteners these days. Baking soda costs just a few dollars and comes straight from earth. After you brush your teeth with toothpaste, scoop a nice amount of baking soda up on your toothbrush and then buff your teeth clean with it. Do daily for 14 days and you will notice a new shade of whiteness to your teeth! Stop and take a break if it stings.

    WHAT’S THE NICEST THING ANYONE HAS EVER SAID TO YOU?

    One of my clients who came through my one-on-one health coaching, Monica Rowsom said, “I could not have done this without you, I don’t know how I could ever repay you. Thank you for having the confidence in me that I could lose weight and improve my thyroid condition when doctors told me I would never be able to lose weight. Now I have lost 38 pounds and feel the best I have ever felt. Thank you.”

    WHY DO YOU BELIEVE THAT LIFE IS BETTER RAW?

    Because raw foods provide us with high high high amounts of nutrition and most of us are nutritionally deprived. Raw foods help our spirituality, they connect us with nature and help us to live in harmony. Raw foods also cure eating disorders like binge eating, emotional eating and overeating. We can heal our mind, body and spirit using raw foods – no joke! And it’s extremely hard to binge eat and overeat on raw foods because they are so nutrient rich! It’s easier to overeat on junk processed foods because they are empty and our digestive system sends a message to the brain “Didn’t get real food, need nutrients, send more food please!” and hence we are left feeling so so hungry after eating huge amounts of junk food. Raw foods fill our cells with nothing but wholeness!

    Our Master of The Month shares her favourite recipe…

    CLASSIC CASHEW CHEESECAKE WITH ALMOND CRUST
    Prep time: 25 minutes (+ 3 hours to soak nuts)
    Freezer time: 4 hours
    Makes 16 slices
    Earth Diet Classic Cashew Cheesecake  

    INGREDIENTS:

    For the Base

    4 cups almond meal

    5 tablespoons maple syrup (or raw honey)

    1 tablespoon coconut oil

    For the Cheesecake Filling

    ½ cup lemon juice (approximately 2 large lemons)

    3 cups of cashew nuts, soaked in water for 3 hours to soften

    ¾ cup maple syrup

    ¾ cup coconut oil

    1 table spoons pure vanilla extract

    1/8 teaspoon salt

    ACTION:

    1. Make the base. In a bowl, combine the almond meal, maple syrup (or honey), and coconut oil. The mixture should be dry, but moist enough to hold together. Add a little water if the mixture is too dry.
    2. Turn the base mixture into a deep pie dish (large enough to hold 2½ quarters) and press it evenly to cover the bottom and sides of the dish. Set aside.
    3. Make the cheesecake filling. Put all the ingredients in a powerful blender and blend until filling is very smooth and light in texture. Pour the filling into the prepared crust.
    4. Freeze for 4 hours. Once set. Cut into slices and serve.

    TIP:

    To make a smaller cheese cake, halve the recipe.

    VARIATIONS:

    1. Spoon 1 tablespoon of cheesecake filling into each of 32 paper baking cups for Mini Cheesecakes.
    2. Top with a few fresh berries.
